Oven-baked ratatouille

Ingredients:
  • 36.40 gm olive oil
  • 2 medium red onions, chopped
  • 2 medium zucchini, chopped
  • 3 baby eggplant, chopped
  • 1 medium yellow capsicum, chopped
  • 1 medium green capsicum, chopped
  • 250g cherry tomatoes
  • 1 bulb garlic, cloves separated, peeled
  • basil leaves, to serve
Instructions:
  • Preheat your oven to 200°C/180°C fan-forced. In a roasting pan, combine oil, onion, zucchini, eggplant, capsicum, salt, and pepper. Roast for 20 minutes, then add tomatoes and garlic. Continue roasting for another 20 minutes until vegetables are golden and tender. Finish with a sprinkle of fresh basil before serving.
