Elevate veggies with roasted Italian dressing for added flavor in a simple dish.
Ingredients:
  • 2 medium baking potatoes, unpeeled, cut into 1-inch chunks (1 1/3 cups)
  • 1 medium dark-orange sweet potato, unpeeled, cut into 1-inch chunks (1 cup)
  • 2 medium onions, cut crosswise in half, then cut into wedges
  • 1/3 cup Italian dressing
  • 1/4 teaspoon ground red pepper (cayenne)
  • 1 medium bell pepper, cut into 1-inch squares
Instructions:
  • Position the oven rack slightly above the middle and preheat the oven to 500°F. Generously coat a 13x9-inch pan with cooking spray.
  • Arrange baking potatoes, sweet potato, and onions in a pan. Combine dressing and red pepper in a small bowl until smooth; drizzle over the vegetables.
  • 1. Cover the dish with foil and roast for 20 minutes. 2. Add bell pepper, cover again, and continue roasting for an additional 5 minutes. 3. Uncover and roast for another 10 minutes, or until vegetables are tender.
