Elevate your chicken with flavorful Thai marinade.
Ingredients:
  • 1 chicken, size 18-20
  • 1 jar Pad Thai Paste
  • 36.80 gm oil
  • 1 lime, zested & juiced
  • 73.20 gm Fish Sauce
  • 1 long red chilli, de-seeded and finely sliced
  • 5 makrut lime leaves, shredded
  • 40.00 gm coconut sugar
  • Banana leaves, to serve
  • Fresh basil, to serve
  • Lime wedges, to serve
Instructions:
  • Preheat the BBQ or oven to 190°C.
  • Lay the chicken breast side down on a cutting board and carefully cut along both sides of the backbone using poultry shears or kitchen scissors. Remove and discard the backbone.
  • Flip the chicken and gently press down on the breastbone to flatten it before transferring it to a non-metallic dish.
  • Mix Valcom Pad Thai paste, oil, freshly squeezed lime juice, Squid Brand Fish Sauce, chopped chili, torn makrut lime leaves, and coconut sugar in a large bowl until well combined.
  • Drizzle the marinade generously over the chicken, ensuring it is fully coated. Let the flavors meld by marinating for several hours or overnight.
  • Put the chicken in the preheated BBQ or oven set at 190°C for 50 minutes or until the juices run clear.
  • Present the dish on a stylish board lined with a decorative banana leaf, and top it off with vibrant basil leaves and zesty lime wedges for a pop of flavor.
