Delicious homemade paella bursting with flavorful spices, bell peppers, tomatoes, and fresh herbs.
Ingredients:
  • 250g chorizo sausage (see note)
  • 18.20 gm olive oil
  • 500g Free Range Chicken Thigh, trimmed, cut into 5cm pieces
  • 1 large brown onion, finely chopped
  • 1 red capsicum, finely diced
  • 1 tsp ground turmeric
  • 3.75 gm ground cumin
  • 300.00 gm white rice
  • 400g can Italian Diced Tomatoes
  • 510.00 gm chicken style liquid stock
  • 250.00 ml frozen peas
  • 125.00 ml fresh flat-leaf parsley leaves, roughly chopped
Instructions:
  • Preheat a large heavy-based frying pan over medium-high heat. Add the sausage and cook for 4 minutes, turning occasionally, until browned. Transfer to a plate and slice into 1cm-thick pieces.
  • Lower the heat to medium. Incorporate oil and chicken into the frying pan. Sear for 2 to 3 minutes on each side, or until a golden color is achieved. Introduce onion, garlic, and capsicum. Saute while stirring for 2 to 3 minutes, or until tender.
  • Combine turmeric, cumin, rice, tomatoes, and stock in a frying pan. Stir well to combine and bring to a boil. Reduce heat, cover, and simmer for 15 minutes, stirring occasionally, until rice is tender.
  • Uncover the dish. Mix in the peas and sausage. Cook for an additional 1 to 2 minutes until everything is heated. Garnish with parsley. Serve hot.
