Seafood and pearl couscous paella recipe

Mediterranean-inspired seafood dish with bold flavors, high protein, and fiber. Enhanced with harissa and wine for a delicious and effortless meal.
Ingredients:
  • Pinch of saffron strands
  • 125ml (1/2 cup) dry white wine
  • 18.20 gm extra virgin olive oil
  • 1 large brown onion, finely chopped
  • 2 celery sticks, finely chopped
  • 1 tsp harissa paste
  • 130g (3/4 cup) pearl couscous
  • 250ml (1 cup) salt-reduced chicken or fish stock
  • 150g roasted red peppers, thinly sliced
  • 400g firm white fish fillet, cut into 3cm pieces
  • 250g green prawns, peeled, deveined, tails intact
  • 8 mussels, scrubbed, debearded
  • 250g green beans, trimmed, halved crossways
  • Lemon wedges, to serve
Instructions:
  • Mix the saffron and wine in a small jug, allowing the flavors to develop.
  • In a large flameproof baking dish, heat oil over medium heat. Add onion and celery, cook while stirring for 5 minutes until softened. Add garlic and harissa, stir for 1 minute until aromatic.
  • Combine couscous, stock, peppers, and wine mixture. Add fish, prawns, and mussels. Simmer covered for 10 minutes. Add beans and simmer uncovered for 5 more minutes until liquid evaporates and seafood is cooked. Serve with lemon wedges.
