Elevate your turkey chili with rich cocoa, crunchy cashews, and a flavorful homemade sofrito for a delicious paleo twist.
Ingredients:
  • 1 white onion, chopped
  • 2 teaspoons minced garlic
  • 1 teaspoon sofrito
  • 1 (20 ounce) package ground turkey
  • 1 (28 ounce) can whole peeled tomatoes
  • 1 cup water, plus more if desired
  • 0.75 (6 ounce) can tomato paste, divided
  • 1 cup chopped cashews
  • 2 teaspoons chili powder, or more to taste
  • 1 teaspoon ground cumin
  • 1 teaspoon unsweetened cocoa powder
  • 1 teaspoon sea salt, or to taste
  • 1 teaspoon ground black pepper, or to taste
Instructions:
  • In a heavy-bottomed saucepan over medium-high heat, sizzle onions in olive oil until fragrant, for about 3 minutes. Mix in garlic and sofrito, sauteing until fragrant for another 3 minutes. Push the mixture to the side of the pan.
  • Add broken pieces of turkey to the saucepan, ensuring they are not on top of the onion mixture. Cook, stirring often, until the turkey is browned and crumbly, about 5 to 7 minutes.
  • Mix tomatoes, water, and roughly 3/4 of the tomato paste into the turkey until evenly colored. Add cashews, chili powder, cumin, and cocoa powder. Stir well to blend the flavors, cover the pan, and simmer over medium-low heat, stirring occasionally and adding water to adjust consistency, until tomatoes soften, about 1 hour. Season with salt and pepper to taste.
