Indulge in the comforting flavors of Portuguese salt cod, scrambled eggs, potatoes, and marinated olives for a unique and delicious dish. Find salt cod in select supermarkets or at a Portuguese deli.
Ingredients:
  • 500 g salt cod from sustainable sources
  • 1 bunch fresh flat-leaf parsley (30g)
  • 2 shallots
  • 1 lemon
  • 3 onions
  • olive oil
  • 20 mixed-colour olives stone in
  • 1 pinch of dried chilli flakes
  • 2 tablespoons red wine vinegar
  • extra virgin olive oil
  • 500 g Maris Piper potatoes
  • 1.2 litres vegetable oil for frying
  • 6 large free-range eggs
Instructions:
  • In a large bowl, cover the salt cod completely with cold water and soak for at least 12 hours, changing the water regularly. Finely slice parsley stalks, peel shallots, and strip lemon zest. In a large pan, simmer salt cod, parsley stalks, shallots, and lemon peel for 20 minutes. Meanwhile, cook onions in olive oil until golden. Mix olives, parsley leaves, chili flakes, vinegar, and olive oil. Remove salt cod, debone, and flake into onion pan. Cook for 10 more minutes. Slice potatoes into matchsticks and fry until lightly golden. Stir eggs into the cod mixture, then add most of the parsley and half of the potato matchsticks. Top with remaining matchsticks. Serve with marinated olives and parsley. Enjoy with a green salad and white wine.
