Healthy & Flavorful Snapper: High protein, low-GI, and packed with calcium - a nourishing choice for guilt-free indulgence.
Ingredients:
  • 55g raisins
  • 40.00 ml verjuice (see note) or boiling water
  • 20.00 ml chopped thyme leaves
  • Zest and juice of 1/2 lemon
  • 27.30 gm extra virgin olive oil
  • 4 x 180g red snapper fillets, pin-boned
  • Olive oil spray
  • 3.60 gm honey
  • 1 bunch flat-leaf parsley, leaves picked
  • 40g pine nut
  • 50g low-fat feta, crumbled
Instructions:
  • Soak raisins in tangy verjuice for 5 minutes until they plump up. Drain, keeping the flavorful liquid.
  • In a bowl, mix together thyme, zest, and 2 teaspoons of oil. Season to taste and thoroughly coat the fish with the mixture.
  • Preheat a large frypan over medium heat and lightly spray with olive oil. Cook fish skin-side down in batches for 5 minutes until golden. Flip fish and cook for another 2 minutes until cooked through. Transfer to a plate, cover loosely with foil, and keep warm.
  • Combine lemon juice, honey, remaining oil, and reserved raisin liquid in a bowl. Season to taste, then mix in parsley, pine nuts, crumbled feta, and soaked raisins. Toss until everything is well combined.
  • Present the fish alongside the vibrant parsley salad.
