Chef John's juicy pan-roasted chicken breast skillet is a quick and easy weeknight meal.
Ingredients:
  • 4 boneless chicken breast halves with skin
  • salt and freshly ground black pepper to taste
  • 2 tablespoons olive oil
  • 1 tablespoon chopped fresh herbs (thyme, parsley, rosemary)
  • 0.25 cup apple cider vinegar
  • 4 tablespoons cold butter, cut into small pieces
  • 1 tablespoon chicken broth (or water), if needed to thin sauce
Instructions:
  • Assemble all ingredients needed for the recipe.
  • Season the chicken generously with salt and pepper on both sides.
  • In a hot, shimmering skillet, pan-sear chicken breasts skin-side down until golden brown, about 5 to 6 minutes. Sprinkle with fresh herbs while cooking.
  • Gently turn the chicken breasts and cook until the center reaches 150°F (66°C), approximately 5 minutes more.
  • In the pan with the chicken, combine vinegar and cold butter. Gently shake the pan until the butter melts and the chicken reaches an internal temperature of at least 165 degrees F (74 degrees C), for 2 to 3 minutes longer.
  • Add 1 tablespoon of chicken broth to sauce to achieve desired consistency.
