Delicious and protein-packed chicken breast recipe perfect for cozy winter evenings with the family.
Ingredients:
  • 6 (180g each) single chicken breast fillets, trimmed
  • 1 large pontiac potato, washed, unpeeled, sliced
  • 6 (about 325g) whole marinated artichoke hearts, drained
  • 6 garlic cloves, unpeeled
  • 6 sprigs fresh dill
  • 1.20 gm salt
  • 1/2 tsp freshly ground black pepper
  • 6 thin slices pancetta
  • 21.00 gm fresh lemon juice
Instructions:
  • Preheat the oven to 220°C with a rack placed in the middle.
  • In a large ovenproof dish, combine chicken, potato, artichoke hearts, garlic, dill, oil, salt, and pepper. Toss gently to coat everything evenly in oil and arrange the chicken on top in a single layer.
  • Place a slice of pancetta on each chicken breast and generously drizzle with fresh lemon juice.
  • Bake the chicken and vegetables in a hot oven for 30 minutes until the chicken is cooked through and the pancetta is crispy. Serve promptly with a drizzle of the delicious pan juices.
