Pancetta hash with eggs and apple salad

Effortlessly delicious hash paired with refreshing apple and watercress salad for a satisfying meal.
Ingredients:
  • olive oil
  • 6 slices higher-welfare pancetta cut into wide strips
  • 2 slices good-quality ham torn into pieces
  • 500 g potatoes cubed
  • 1 splash white wine vinegar
  • 2 very fresh free-range eggs
  • 1 large handful watercress
  • 1 red apple very finely sliced
  • 1 squeeze lemon juice
Instructions:
  • In a wide frying pan, heat a splash of oil, then cook pancetta, ham, and potatoes together for 10–12 minutes until potatoes are golden and crisp. Divide between 2 plates. In a wide saucepan, bring water to a boil with white wine vinegar. Gently poach 2 eggs for a couple of minutes. Place one egg on each plate of ham and potatoes. Toss watercress and sliced apple together, then dress with salt, pepper, lemon juice, and olive oil. Top each poached egg with a small pile of salad and serve.
