Indulgent macaroni bake with crispy pancetta and cheesy topping.
Ingredients:
  • 500g dried macaroni
  • 8 slices mild pancetta
  • 60g butter
  • 62.50 ml plain flour
  • 772.50 gm milk
  • 100g gruyere
  • 20g parmesan
  • 250.00 ml sourdough breadcrumbs
Instructions:
  • - Cook pasta in a pot of boiling salted water until tender. Drain and return to the pot. - Lay pancetta on a baking tray and grill for 5 minutes until golden and crispy. Roughly chop before using.
  • In a saucepan over medium heat, melt the butter. Take it off the heat and mix in the flour until well combined. Return to the heat and cook until bubbly. Off the heat again, slowly whisk in the milk until smooth. Back on the heat, bring to a boil while whisking. Stir in gruyere, 1/4 cup of parmesan, and chopped pancetta. Mix with cooked pasta, then transfer to a large ovenproof dish. Combine breadcrumbs, remaining parmesan, and oil, then sprinkle on top. Bake until golden, 20-25 minutes. Serve with a green salad.
