Prosciutto-wrapped chicken: Flavorful, moist, and tender!
Ingredients:
  • 8 sage leaves
  • 4 chicken breast fillets
  • 8 slices pancetta
  • 82.50 ml balsamic vinegar
  • 12 small vine-ripened tomatoes
  • Olive oil cooking spray
  • Rocket leaves, to serve
Instructions:
  • Preheat the oven to 200°C. Place 2 sage leaves on each chicken fillet, then wrap 3cm-wide strips of pancetta around the breasts and secure with toothpicks. Finish by sprinkling with freshly ground black pepper.
  • Transfer the chicken to a stylish ceramic dish. Whisk together vinegar and oil in a pitcher and pour it over the chicken. Slide the dish into the oven.
  • Prepare a baking tray with baking paper and arrange tomatoes on it. Drizzle with oil and season with sea salt flakes and pepper. Roast in the oven with the chicken for 20 minutes, until fully cooked. Discard toothpicks from the chicken and serve with roasted tomatoes and fresh rocket.
