Delicious Catalan cookies with pine nuts, almonds, or coconut, perfect for celebrating All-Saints Day in October.
Ingredients:
  • 0.33333334326744 pound potatoes, cubed
  • 3.5 cups ground almonds
  • 2.5 cups white sugar
  • 1 tablespoon lemon zest
  • 0.75 cup pine nuts
  • 2 egg yolks, beaten
  • 0.75 cup cornstarch
  • 2 egg whites, beaten
Instructions:
  • In a small saucepan, boil the potatoes until tender. Drain and mash with a fork. Let cool.
  • Preheat oven to 425 degrees F (220 degrees C) and lightly butter a baking sheet.
  • Mix together the cooled potatoes and almonds, gradually incorporating the sugar with a wooden spoon. Add the lemon zest and blend in with your hands. Shape the dough into 1-inch balls, coat them in pine nuts, and brush with egg yolk. Form the balls into crescents, coat with cornstarch and egg white. Place the cookies on the baking sheet.
  • Bake in a hot oven until lightly golden, for about 10 to 12 minutes.
