Indulge in a divine steamed panettone and orange pudding masterpiece.
Ingredients:
  • 160g sultana
  • 60ml marsala
  • Finely grated zest of 2 oranges, plus 2 whole oranges, sliced
  • 440g caster sugar
  • 400g panettone, cut into 2cm pieces (see notes)
  • 40.00 ml mixed peel
  • 55g almond
  • 3 eggs, lightly beaten
  • 500ml thickened cream
  • 500ml milk
  • 50g brown sugar
Instructions:
  • Combine the sultanas and Marsala in a bowl, then let them soak for 30 minutes.
  • Add orange slices to a saucepan and cover them with cold water. Simmer over medium heat, then drain. Repeat the blanching process twice.
  • Combine caster sugar, water, and orange slices in a saucepan over medium heat. Stir until the sugar dissolves. Simmer for 10-12 minutes until the orange slices are tender and translucent. Let them cool in the syrup.
  • In a bowl, combine panettone, mixed peel, nuts, zest, sultanas, and soaking liquid. In another bowl, mix together eggs, cream, milk, and brown sugar. Pour the egg mixture over the panettone mixture and let it soak for 30 minutes.
  • Prepare a 1.2L pudding basin by greasing it. Decorate by pressing orange slices onto the base and sides of the basin, while saving some syrup and a few slices for serving later. Finally, fill the basin with the panettone mixture.
  • Place a sheet of foil over a sheet of baking paper and fold a pleat through the center. Cover the pudding with the paper-side down and secure it with kitchen string. Place the pudding in a large saucepan and fill halfway up the sides of the basin with boiling water. Steam over low heat with a lid on for 2 hours, adding water as necessary. Remove the pudding from the pan and let it rest for 15 minutes before serving.
  • Heat the reserved orange syrup in a pan over medium-low heat for 5 minutes until warmed through.
  • Flip the pudding onto a platter, pour over the warm orange syrup, and garnish with the remaining orange slices.
