Chilled panettone puddings with poached spiced cherries

Delight in the holiday season with these delicious Christmas puddings bursting with festive flavors and aromas.
Ingredients:
  • 8 x 1.5cm-thick slices of panettone
  • 40g butter, softened
  • 52.80 gm orange marmalade
  • 2 eggs, lightly whisked
  • 125ml cream
  • 110.00g caster sugar
  • 1 tsp vanilla bean paste
  • 250g fresh cherries, stems removed
  • 250ml rose petal
  • 2 whole star anise
  • 1 cinnamon stick
Instructions:
  • 1. Preheat your oven to 160°C. 2. Grease four dariole moulds or ramekins with a 2/3-cup (160ml) capacity. 3. Cut 8 discs using a 7cm round pastry cutter from the panettone slices. 4. Spread butter and marmalade on the discs. 5. Place two discs in each greased mould.
  • Combine eggs, milk, cream, sugar, and vanilla bean paste in a jug and whisk until thoroughly mixed. Pour over panettone slices, allowing them to soak for 15 minutes. Transfer to a roasting pan and add enough boiling water to reach halfway up the sides of the moulds. Bake in a preheated oven for 20 minutes or until set. Chill in the fridge for 1 hour before serving.
  • For the spiced cherries, combine cherries, wine, sugar, star anise, and cinnamon in a saucepan over medium heat. Simmer until cherries are tender and syrup thickens, about 15 minutes. Chill in a bowl covered with plastic wrap in the fridge.
  • Transfer the puddings onto serving plates and elegantly spoon the cherries and syrup around them. Serve promptly to enjoy the delightful flavors.
