Chilled yogurt soup with rhubarb, watermelon, and strawberries - a refreshing summer delight!
Ingredients:
  • 1 cup chopped fresh rhubarb
  • 1/2 cup water
  • Juice of 2 limes
  • 2 cups cubed seedless watermelon (rind removed)
  • 1 cup fresh strawberries
  • 1/2 cup agave nectar
  • 4 tablespoons Greek honey vanilla yogurt (from 6-oz container)
Instructions:
  • Place fresh rhubarb, a splash of water, and a squeeze of fresh lime juice in a small microwave-safe bowl. Cover the bowl with plastic wrap and microwave on high for 5 minutes.
  • Use a slotted spoon to lift the rhubarb out of the bowl. Pour the remaining juices into a blender, then add watermelon, strawberries, and agave nectar. Blend on high speed until smooth.
  • Spoon mixture into 4 dessert bowls, then add a dollop of 1 tablespoon yogurt on each. Serve right away.
