Delight in this 5-ingredient, gluten-free, vegan beverage from Betty Crocker's diabetes cookbook, bursting with fresh and invigorating flavors.
Ingredients:
  • 3 cups cubed seedless watermelon
  • 2 cups halved fresh strawberries
  • 2 tablespoons fresh lime juice
  • 1/4 cup packed fresh mint or cilantro leaves
  • 3 cups chilled sparkling water
Instructions:
  • In a blender or food processor, combine watermelon, strawberries, and lime juice. Blend for about 30 seconds until smooth. Strain the mixture through a large fine-mesh strainer placed over a medium bowl. Allow it to sit for 15 minutes, stirring occasionally. Discard the fruit pulp left in the strainer.
  • In a large pitcher, gently muddle mint leaves with the back of a spoon. Mix in the strained fruit mixture and sparkling water. Serve over ice.
