Make irresistible Pani Popo, a Samoan coconut bread, with just 5 simple ingredients for a speedy and delicious treat.
Ingredients:
  • 1 (12 ounce) package frozen dinner rolls dough, thawed
  • 15 ounces water, divided
  • 1 (14 ounce) can coconut milk
  • 1 cup sugar
  • 2 tablespoons cornstarch
Instructions:
  • Place the rolls in a 9x13-inch baking dish, cover with plastic wrap, and let them rise until they double in size, approximately 30 minutes.
  • In a saucepan, mix together 14 ounces of water, coconut milk, and sugar. In a small bowl, whisk the remaining water with cornstarch. Bring the coconut milk mixture to a boil, then whisk in the cornstarch mixture. Reduce the heat to medium-low and simmer, stirring occasionally, until the sauce thickens, approximately 3 minutes.
  • Preheat the oven to 350°F (175°C) and unwrap the rolls.
  • Place the rolls in the preheated oven for 10 minutes. Drizzle generously with coconut sauce, ensuring at least half of each roll is coated. Return to the oven and bake until golden brown, 5 to 10 more minutes. Let them cool in the dish for 3 to 5 minutes before serving them warm.
