Teriyaki ginger chicken bites, marinated and deep-fried in foil packets for a delicious and easy appetizer.
Ingredients:
  • 0.5 cup teriyaki sauce
  • 1 (1 inch) piece fresh ginger, grated
  • 0.25 teaspoon crushed red pepper flakes
  • 1 pound skinless, boneless chicken breast halves - cut into bite-size pieces
  • 30 4x4-inch squares aluminum foil, or as needed
  • oil for deep frying
Instructions:
  • Combine the teriyaki sauce, garlic, ginger, and red pepper flakes in a bowl, then toss in the chicken pieces until well coated.
  • Chill the chicken in the refrigerator for 3 to 4 hours, or preferably overnight, after covering the bowl.
  • Place a marinated chicken piece at the center of an aluminum square.
  • Fold each square diagonally over a chicken piece in a triangle shape. Fold up the open edges several times and press tightly to seal the chicken in the foil. Repeat with the rest of the chicken pieces. Dispose of the marinade used.
  • Preheat oil in a deep-fryer or large saucepan to 350°F (175°C).
  • Carefully place the sealed foil packets into the hot oil and fry until the chicken is tender and fully cooked, for 2 to 4 minutes. Once done, drain the packets on paper towels and let them cool slightly.
  • To serve, gently tear the packets open along the sealed edges.
