Pappardelle with peas, broad beans & pecorino

Whip up a tasty pasta dish in only 15 minutes!
Ingredients:
  • 400 g pappardelle
  • 1 big handful of peas
  • 1 big handful of broad beans (outer skins removed)
  • ½ a bunch of fresh mint
  • extra virgin olive oil
  • 1 lemon
  • pecorino cheese
Instructions:
  • Boil the pasta in salted water following packet instructions, saving a bit of the cooking water. Blanch peas and broad beans for 2 minutes. Finely chop mint. Drain and combine pasta with oil, lemon juice, lemon zest, half of the mint, salt, pepper, and pecorino. Use reserved water to moisten if needed. Garnish with remaining mint and extra pecorino, if desired.
