Paprika & lemon feta with pine nuts

Marinate feta in paprika, turmeric, oregano, and lemon for a delicious party appetizer!
Ingredients:
  • 400g-piece Greek feta
  • 2.50 gm sweet paprika
  • 1/2 tsp ground turmeric
  • 80ml (1/3 cup) olive oil
  • 20.00 ml chopped fresh oregano
  • 1 tsp finely shredded lemon rind
  • 55g (1/3 cup) pine nuts
  • Crusty bread or wafers, to serve
Instructions:
  • Place the feta in an elegant glass or ceramic dish. Then, in a non-stick frying pan over medium heat, sprinkle the paprika and turmeric. Stir and cook for about 30 seconds or until it releases a fragrant aroma.
  • In a jug, mix the paprika, oil, oregano, and lemon rind. Pour the flavorful oil mixture over the feta, cover with plastic wrap, and chill in the fridge for 1-2 hours to enhance the flavors.
  • Toast pine nuts in a small non-stick frying pan over medium heat, stirring occasionally, for about 3 minutes until golden brown.
  • Take the feta out of the fridge and let it sit for 15 minutes to reach room temperature. Top with pine nuts and serve right away with crusty bread or wafers, if preferred.
