Loaded roasted cauliflower salad recipe

"Quick and cozy winter salad with roasted cauliflower, crumbled feta, and zesty orange."
Ingredients:
  • 800g cauliflower
  • 2.50 gm smoked paprika
  • 56.88 gm extra virgin olive oil
  • 42.00 gm orange juice
  • 21.00 gm lemon juice
  • 2 oranges, segmented
  • 1 green onion, thinly sliced
  • 125.00 ml fresh flat-leaf parsley leaves
  • 125.00 ml fresh mint leaves
  • 100g fetta, crumbled into large pieces
  • 62.50 ml dried cranberries
Instructions:
  • Preheat the oven to 220C/200C fan-forced and line a large baking tray with baking paper.
  • In a large bowl, combine cauliflower with paprika, garlic, and 2 tablespoons of oil. Season generously with salt and pepper. Toss until evenly coated. Spread cauliflower in a single layer on a baking tray. Roast for 20 to 25 minutes, or until it turns golden and tender.
  • In a bowl, mix together orange juice, lemon juice, and the rest of the oil. Add orange slices, onion, parsley, and mint. Toss gently. Place cauliflower in a large serving dish, then top with the orange mixture, feta cheese, and cranberries. Season with salt and pepper, then serve.
