Elevate roasted butternut squash with gourmet smoked ham and Gruyère, ideal for festive gatherings.
Ingredients:
  • 1 (3 pound) butternut squash
  • 1 tablespoon Dijon mustard
  • 0.25 cup thinly sliced green onions, plus more for garnish
  • 10 ounces diced smoked ham
  • 6 ounces Gruyere cheese, diced
  • 2 ounces Gruyere cheese, grated
Instructions:
  • Preheat the oven to 375°F (190°C) and line a baking sheet with aluminum foil.
  • Cut the butternut squash in half lengthwise, starting at the stem end. Remove the seeds with a spoon. Trim 1/8 inch from the bottom of each half to create a flat surface for baking. Then, place the halves on the baking sheet.
  • Place in the oven's center and roast until tender, about 60 to 90 minutes. Allow to cool slightly before handling. Then, raise the oven temperature to 475 degrees F (245 degrees C).
  • Scoop out squash flesh into a bowl, leaving a 1/2 inch border attached to the skin to keep shells intact.
  • Combine the egg, Dijon, salt, and pepper with the squash until smooth or slightly chunky. Then mix in the green onions, ham, and diced Gruyère until well combined.
  • Evenly distribute the mixture back into the squash shells. Top with a generous sprinkle of grated Gruyère.
  • Bake until the cheese is golden brown, approximately 15 minutes in the preheated oven.
  • Take the squash halves out of the oven and place them on a cutting board. Top with green onions, slice each half into four pieces, and enjoy!
