Air fryer chicken Cordon Bleu: Crispy chicken stuffed with deli ham and Swiss cheese, perfect for a satisfying meal for two.
Ingredients:
  • 2 boneless, skinless chicken breasts
  • salt and ground black pepper to taste
  • 1 tablespoon Dijon mustard
  • 4 slices deli Swiss cheese
  • 4 slices deli ham
  • 2 toothpicks
  • 0.25 cup all-purpose flour
  • 1 egg, beaten
  • 1 cup panko bread crumbs
  • 0.33333334326744 cup grated Parmesan cheese
  • cooking spray
Instructions:
  • Lay a chicken breast flat on a work surface. Cut horizontally through the middle without going all the way through. Open the halves like a book. Place the chicken between 2 sheets of plastic wrap on a sturdy surface and gently pound to 1/4-inch thickness using a meat mallet. Repeat with the other chicken breast.
  • Season the chicken breasts with a touch of salt and pepper, then generously spread Dijon mustard on top. Lay a slice of cheese on each breast, followed by 2 slices of ham and another slice of cheese. Roll each breast and secure with a toothpick.
  • Prepare a flour bowl, an egg bowl, and a panko-Parmesan bowl for breading.
  • Preheat the air fryer to 350°F (175°C).
  • Coat chicken breasts in flour, then dip in beaten egg and bread crumb mixture, ensuring both sides are coated. Place breaded chicken on a plate, spray with nonstick spray, and let sit for 5 minutes. Preheat the air fryer. Once preheated, place chicken in a single layer in the air fryer basket and cook.
  • Place the chicken breasts in the preheated air fryer for 10 minutes. Then, flip the chicken, spray any dry spots with nonstick spray, and continue cooking until the center is no longer pink, about 8 minutes more or until the thermometer reads 165 degrees F (74 degrees C).
