Chicken Cordon Bleu in the Air Fryer

Air fried Chicken Cordon Bleu: Breaded chicken breasts stuffed with ham and Swiss cheese for a delicious twist.
Ingredients:
  • 4 (5 ounce) skinless, boneless chicken breast halves
  • 2 slices deli ham
  • 2 slices deli Swiss cheese
  • 0.25 cup all-purpose flour
  • 0.5 teaspoon salt, or to taste
  • 0.66666668653488 cup plain dry bread crumbs
  • 3 tablespoons unsalted butter, melted
Instructions:
  • Sandwich each chicken breast between parchment paper on a cutting board. Gently flatten each breast to 1/4 inch thickness using a mallet or foil-wrapped brick, making sure not to puncture all the way through.
  • Cut the ham and Swiss cheese slices in half to yield 4 pieces of each. Place 1 piece of ham and 1 piece of cheese in the center of each flattened chicken breast. Roll up the chicken like a jelly roll, ensuring the ham and cheese are tucked inside. Secure the ends and sides with toothpicks to prevent the cheese from oozing out. Refrigerate for a minimum of 15 minutes, or up to 4 hours before cooking.
  • Preheat your air fryer to 350°F (175°C), following the manufacturer's guidance.
  • In a small bowl, mix together flour, salt, and pepper. Place beaten egg in a separate bowl and bread crumbs in a third bowl.
  • First, coat each chicken bundle in the flour mixture, followed by dipping in the egg, and finally coat in bread crumbs. If you see any spots with only flour, lightly pat with egg and bread crumbs. Gently brush each bundle with melted butter before placing in the air fryer basket.
  • Cook the chicken in the air fryer until the crust is golden brown, the chicken is cooked through without any pink in the center, and the juices run clear, approximately 20 minutes. Ensure the internal temperature reaches at least 165 degrees F (74 degrees C).
