One Skillet Inside-Out Chicken Cordon Bleu

Make quick and delicious Inside-Out Chicken Cordon Bleu in just 30 minutes using one skillet, chicken breasts, Swiss cheese, and deli ham slices.
Ingredients:
  • 1/4 cup canola oil
  • 1/2 cup Gold Medal™ all-purpose flour
  • Salt and pepper
  • 2 eggs
  • 1 cup Progresso™ Italian style panko crispy bread crumbs (half 8-oz box)
  • 1 lb thin sliced chicken breasts, rinsed, patted dry
  • 8 very thin slices Swiss cheese (about 1/2 oz each)
  • 4 slices deli cooked ham
Instructions:
  • Preheat oven to 400°F. Heat oil in a 10-inch ovenproof skillet over medium heat. In one shallow bowl, combine flour, salt, and pepper. In another shallow bowl, beat an egg. In a third shallow bowl, place bread crumbs.
  • Once the oil is hot, generously coat each chicken breast slice with the flour mixture, followed by the egg and bread crumbs. Transfer the coated slices to the skillet and cook for 4 to 5 minutes on each side until they turn a beautiful golden brown. You may need to cook them in 2 separate batches for best results.
  • After achieving a golden color on all the chicken slices, layer each slice in the skillet. Add one slice of cheese on each chicken slice, followed by a piece of ham and another slice of cheese on top.
  • Bake for 12 to 15 minutes until the cheese is golden brown and bubbly, and the chicken is cooked through.
