Skillet Sausage and Potatoes

One-skillet sausage, potatoes, and peppers: a quick and delicious weeknight meal.
Ingredients:
  • 1 pound small Honey Gold® potatoes (such as Potato Inspirations®)
  • 1 tablespoon olive oil, or as needed
  • 1 (12 oz) package fully-cooked smoked beef sausage, sliced in 1/2-inch pieces
  • 1 red bell pepper, sliced vertically
  • 1 green bell pepper, sliced vertically
  • 1 red onion, cut into 1/2-inch pieces
  • 1 Golden Delicious apple - peeled, cored, and cut into 1/2-inch cubes
  • 1/2 cup frozen petite peas
  • 1 teaspoon dried thyme leaves
  • salt and freshly ground black pepper to taste
  • chopped parsley (optional)
Instructions:
  • In a large pot, submerge potatoes in salted water and bring to a boil. Simmer on medium-low heat until easily pierced with a fork, for about 10-12 minutes. Drain the cooked potatoes.
  • In a large skillet over medium heat, sizzle smoked sausage in olive oil until beautifully browned on both sides, approximately 3 minutes. Transfer the sausage to a paper towel-covered plate, keeping the flavorful drippings in the pan.
  • Cut the potatoes into quarters. Cook the potatoes, red pepper, green pepper, onion, and apple in a skillet until the potatoes start to brown, about 8 to 10 minutes, adding oil as needed. Add garlic and cook until fragrant, about 30 seconds.
  • Add the sausage back to the skillet, mix in the peas and thyme, and cook until the peas are warm, which should take about 3 to 5 minutes. Season with salt and pepper, then top it off with some chopped parsley for a flavorful garnish.
