Eggs and Sausage Skillet

Elevate your breakfast with a creative one-skillet meal featuring eggs, sausage, and potatoes.
Ingredients:
  • 1 package (12 oz) bulk reduced-fat pork sausage
  • 4 ounces fresh mushrooms, sliced (1 1/2 cups)
  • 3 cups frozen potatoes O’Brien (from 1-lb 12-oz bag), thawed
  • 1/2 teaspoon salt
  • 1 cup shredded Swiss cheese (4 oz)
  • 1 large tomato, chopped (1 cup)
Instructions:
  • Cook the sausage in a 12-inch nonstick skillet over medium-high heat for 5 to 7 minutes, stirring frequently, until it's no longer pink.
  • Combine the mushrooms, potatoes, salt, and pepper with the sausage in a pan. Sauté over medium heat for around 8 minutes, stirring occasionally, until the potatoes start to turn golden brown. Then, lower the heat to simmer.
  • Create 6 wells in potato mixture using the back of a spoon. Crack 1 egg into each well. Cover and cook for 8 to 10 minutes, until egg whites are cooked through and yolks are slightly thickened.
  • Top with a generous amount of cheese and ripe tomato slices. Cover and cook for 3 to 4 minutes, allowing the cheese to melt beautifully.
