Air fryer chicken cordon bleu recipe

Make classic French bistro chicken using the air fryer with crispy panko breadcrumbs. Quick, easy, and impressive dinner for two.
Ingredients:
  • 1 large (about 300g) chicken breast fillet
  • 4 slices ham
  • 4 slices Swiss cheese
  • 50g (1/3 cup) plain flour
  • 1 egg
  • 25g (1/2 cup) panko breadcrumbs
  • 2 small bunches cherry truss tomatoes (about 5 on each)
  • Steamed green beans, to serve
  • Garlic herb butter, to serve
Instructions:
  • Butterfly the chicken to create two thin halves. Lay one piece of chicken on plastic wrap, cover it, and use a rolling pin to flatten it to 1cm thickness. Unwrap, layer with ham and cheese, then roll chicken tightly. Don't stress if the filling sticks out. Repeat with the rest of the chicken, ham, and cheese to make two rolls.
  • Prepare your dredging station by setting up separate bowls for the flour and egg, and a plate for the breadcrumbs. Dredge each chicken roll in flour, shake off excess, dip in egg, then coat with breadcrumbs. Repeat for all chicken rolls.
  • Coat the chicken rolls with a light mist of olive oil and transfer them into the air fryer basket. Air fry at 180°C for 7 minutes. After 7 minutes, insert the tomatoes into the basket and continue cooking for an additional 8 minutes until the chicken is fully cooked and the tomatoes are tender.
  • Arrange the chicken and tomatoes on individual serving plates. Serve alongside green beans drizzled with flavorful garlic and herb butter.
