Paprika spiced cauliflower and broccoli soup with cheddar cheese

Cozy up with zesty cauliflower and broccoli soup to beat the winter chill.
Ingredients:
  • 1 brown onion, coarsely chopped
  • 5.00 gm sweet paprika
  • 2.50 gm ground cumin
  • 1 cauliflower, cut into florets
  • 1 head broccoli, coarsely chopped (including stem)
  • 2 sebago potato, peeled, coarsely chopped
  • 1 litre (4 cups) chicken style liquid stock
  • 60g cheddar cheese
  • 125ml cream
Instructions:
  • In a large casserole, heat oil over medium-high heat. Sauté onion and garlic for 5 minutes until onion softens. Stir in paprika and cumin for 1 minute until aromatic. Add cauliflower, broccoli, and potato, and cook for 5 minutes until cauliflower is slightly tender.
  • Pour in the rich and flavorful chicken stock and bring it to a lively boil. Lower the heat to medium-low and simmer, partially covered, for 20 minutes until the chicken is tender. Take the pot off the heat and let it cool slightly before stirring in the cheddar until fully combined.
  • Puree the cauliflower mixture in batches until velvety. Heat gently in the pan. Pour in the cream and mix well. Season with salt and pepper to perfection. Serve in bowls right away.
