Easy and healthy lemon basil salmon cooked in parchment paper for a perfect dinner for two.
Ingredients:
  • 1 (8 ounce) salmon fillet
  • salt and ground black pepper to taste
  • 0.25 cup chopped basil leaves
  • olive oil cooking spray
  • 1 lemon, thinly sliced
Instructions:
  • Preheat the oven to a toasty 400 degrees F (200 degrees C) and place an oven rack on the lowest level.
  • Lay the salmon fillet, skin-side down, on a large piece of parchment paper and season with salt and black pepper. Create two 3-inch slits in the fillet with a sharp knife and stuff them with chopped basil leaves. Give the fillet a light spray of cooking oil and top it with lemon slices for extra flavor.
  • Wrap the fillet in parchment paper, sealing it tightly. Transfer to a baking sheet.
  • Place the salmon on the bottom rack of the preheated oven and bake for approximately 25 minutes until the salmon is flaky, pink, and opaque. Ensure the interior is slightly darker pink and an instant-read thermometer reads at least 145 degrees F (65 degrees C) when inserted into the thickest part of the fillet. When serving, simply open the parchment paper and discard the lemon slices before plating.
