Flavorful low-fat fish parcels for effortless healthy cooking.
Ingredients:
  • 2 lemons
  • 2 limes
  • 4 x 150g blue-eye fillets (or other firm, white-fleshed fish)
  • 1 eggwhite, lightly beaten
  • 1 punnet cherry tomatoes, halved
  • 62.50 ml small black or nicoise olives
  • 4 bay leaves
  • 60ml white wine
  • Extra virgin olive oil, to drizzle
Instructions:
  • Prepare 4 squares of baking paper measuring 30 x 30cm each. Preheat your oven to 180°C.
  • Peel the lemons and limes, then slice the fruit into 0.5cm rounds.
  • Season the fish generously with salt and pepper. Brush the edges of the baking paper with whisked egg white. Place a piece of fish in the center of each sheet, evenly distribute the tomatoes, lime slices, lemon slices, and olives over the fish, then place a bay leaf on top. Drizzle each parcel with wine. Fold over the edges of the paper and seal tightly to create a perfect airtight package, ensuring there's enough room inside for steam to form.
  • Place the parcels on a baking tray and bake in the oven for 15 minutes. Once cooked, carefully unwrap each package and plate up.
  • Drizzle generously with extra virgin olive oil and enjoy with tender steamed potatoes.
