Indulge in zesty baked lemon fish for a burst of seasonal flavor.
Ingredients:
  • 2 medium lemons
  • 250.00 ml fresh white breadcrumbs
  • 25g butter, chopped
  • 20.00 ml finely chopped fresh chives
  • 1.20 gm sea salt
  • 2 baby fennel, trimmed, thinly sliced
  • 4 (180g each) blue eye fish fillets
  • 250g cherry truss tomatoes
  • Alfa One rice bran oil spray
Instructions:
  • Preheat the oven to 200°C/180°C fan-forced. Grate the zest of one lemon finely, squeeze the juice, and cut the remaining lemon into wedges. Mix breadcrumbs, butter, chives, salt, and lemon zest in a bowl. Season with pepper to taste.
  • Prepare a ceramic baking dish by greasing its 5.5cm-deep, 18cm x 30cm base. Arrange a layer of fennel over the base, followed by placing the fish fillets on top. Finish by drizzling the dish with lemon juice.
  • Coat each fillet with breadcrumb mixture, then top with tomatoes and a spritz of oil. Bake for 15 to 20 minutes until fish is cooked through and topping is golden. Serve with lemon wedges.
