Lemon and herb fish with wedges

Make crispy, guilt-free fish and chips at home!
Ingredients:
  • 750g medium desiree potatoes, cut into wedges
  • 300g frozen fish fillets, thawed
  • 375.00 ml fresh white breadcrumbs
  • 2 tsp finely grated lemon rind
  • 40.00 ml finely chopped fresh flat-leaf parsley leaves
  • 20.00 ml finely chopped fresh mint
  • Lemon wedges, to serve
Instructions:
  • Preheat your oven to 200°C/180°C fan-forced and line 2 large baking trays with baking paper.
  • In a large bowl, coat the potato wedges with 1 tablespoon of oil. Spread them onto a prepared tray, season with salt, and bake for 40 minutes until they are golden and crisp.
  • Pat the fish dry using a paper towel. Combine the breadcrumbs, lemon rind, parsley, mint, and the remaining oil in a bowl. Season the mixture with salt and pepper. Lay the fish in a single layer on the prepared tray. Sprinkle each fillet with 1/4 cup of the breadcrumb mixture and press lightly with your fingertips.
  • Bake until the fish is golden and cooked through, which should take about 10 to 12 minutes. Serve with wedges, vegetables, and a squeeze of lemon for a delicious meal.
