Lemon herb risoni pairs perfectly with chicken or fish.
Ingredients:
  • 332.50 ml dried risoni
  • 2 tsp lemon rind, finely grated
  • 42.00 gm lemon juice
  • 18.20 gm extra virgin olive oil
  • 40.00 ml fresh flat-leaf parsley leaves, chopped
  • 20.00 ml chopped fresh chives
  • 50g baby rocket, torn
  • Lemon zest, to serve
  • Lemon wedges, to serve
Instructions:
  • Prepare the pasta as instructed on the package, then drain it and place it in a heatproof bowl.
  • Combine the rind, juice, oil, parsley, chives, and rocket. Season generously with pepper. Toss everything together. Finish with a sprinkle of zest over the pasta, and serve with lemon wedges.
