Parmesan crisps

Delicious parmesan wafers make a perfect appetizer. Grate fresh parmesan for best results. Imperfections are a chef's treat, and leftovers can garnish salads.
Ingredients:
  • 500.00 ml finely grated parmesan
  • 10.00 ml plain flour
Instructions:
  • Combine the parmesan and flour, then season with a hint of black pepper for added flavor.
  • Preheat a non-stick frypan over gentle heat. Spoon heaped tablespoons of the cheese mixture onto the pan, leaving space between each one. Gently press down to create 7cm circles.
  • Crisp the base for about 1 minute, then gently flip and cook for another 30 seconds.
  • After removing each crisp from the pan, drape it over a rolling pin to create an elegant curl. Let them cool before serving alongside a glass of sparkling wine.
