Instill healthy habits in your kids from a young age by teaching them about the goodness of fruits and veggies, staying active, and controlling portions.
Ingredients:
  • 2 slices bacon, chopped
  • 1 medium onion, chopped (1/2 cup)
  • 1 cup uncooked long-grain regular rice
  • 2 cups Progresso™ chicken broth (from 32 oz carton)
  • 1 cup frozen sweet peas, thawed
  • 3/4 cup grated Parmesan cheese
  • 1/8 teaspoon pepper
Instructions:
  • In a 2-quart saucepan, crisp up the bacon over medium heat for 3 to 4 minutes, stirring occasionally. Add the onion and cook for about 1 minute until tender, stirring occasionally.
  • Coat rice with delicious bacon drippings. Pour in broth and bring to a boil, then lower heat. Cover and let simmer for about 20 minutes until rice is tender and broth is absorbed.
  • Fold peas into the mixture with care. Allow to cook covered for 1 to 2 minutes until peas are heated through; then, off the heat, blend in cheese and pepper until fully incorporated.
