Quick and vibrant side dish with bell peppers, sweet peas, and Parmesan cheese - ready in just 15 minutes.
Ingredients:
  • 1 cup uncooked instant brown rice
  • 1 1/4 cups water
  • 2 tablespoons butter
  • 1 orange, red or yellow bell pepper, finely chopped
  • 1 cup frozen sweet peas (from 12-oz bag)
  • 2 medium green onions, thinly sliced (2 tablespoons)
  • 1/4 cup grated Parmesan cheese
  • Salt and freshly ground pepper to taste
Instructions:
  • Prepare rice according to package instructions.
  • In a large skillet over medium heat, melt butter until sizzling. Sauté bell pepper for 2 minutes, stirring occasionally until it starts to soften. Add peas and onions, cook for an additional 3 minutes, stirring occasionally, until the bell pepper is crisp-tender and the peas are heated through.
  • Combine cooked rice with sautéed vegetables, blending gently. Toss in Parmesan cheese and season with salt and pepper to taste.
