Whip up quick and delicious honey buttered pork with brown fried rice for a satisfying meal in no time!
Ingredients:
  • 40.00 ml almond spread
  • 14.40 gm honey
  • 60ml (1/4cup) olive oil
  • 4 pork cutlets
  • 1 large brown onion, thinly sliced
  • 450g pkt 2 1/2 minute microwave brown rice
  • 350g pkt kale slaw (reserve dressing for another use)
  • 40.00 ml slivered almonds, toasted
  • 21.00 gm fresh lemon juice
  • Steamed baby carrots, to serve
  • Lemon wedges, to serve (optional)
Instructions:
  • In a small bowl, mix together the almond spread, honey, and 1 tablespoon of oil.
  • In a large non-stick pan over medium-high heat, heat half of the remaining oil. Sear the pork for 3 minutes on each side until golden and almost cooked through. Spread almond spread mixture over the pork and cook for an additional 30 seconds on each side until warmed through. Transfer the pork to a plate and cover to keep warm.
  • In a skillet over medium-high heat, heat the reserved oil. Add the onion and cook, stirring frequently, until light golden, about 5 minutes. Mix in the garlic and rice, stirring constantly, until heated through, about 2 minutes. Add the slaw and slivered almonds, cooking for 1 more minute until wilted. Stir in the juice, season to taste, and enjoy!
  • Plate the rice mixture, pork, and carrots. Drizzle any pan juices over the dish and season to taste. Serve with lemon wedges, if desired.
