Parmesan Risotto

Indulge in creamy Parmesan risotto, a decadent Italian dish with Arborio rice, garlic, white wine, and freshly grated Parmesan cheese - perfect as an appetizer or side.
Ingredients:
  • 1.5 tablespoons olive oil
  • 1.5 tablespoons butter
  • 1 shallot, minced
  • 1 clove garlic, minced
  • 1 cup Arborio rice
  • 0.5 cup dry white wine
  • 3 cups hot vegetable stock
  • 0.33 cup freshly grated Parmesan cheese
  • 2 tablespoons minced fresh parsley
  • salt to taste
  • freshly ground white pepper to taste
Instructions:
  • In a large sauté pan over medium-high heat, melt butter with olive oil. Lower heat to medium-low, then add shallot and garlic. Cook and stir until shallots are translucent but not browned, about 5 minutes.
  • Add rice and stir until it's coated in oil and begins to toast, around 5 minutes. Pour in wine and simmer until mostly evaporated. Add one-third of the boiling vegetable broth and stir until absorbed and creamy. Repeat twice more, stirring constantly, for a total of 15 to 20 minutes. Rice should be tender yet firm. Adjust vegetable stock as needed.
  • Take the saucepan off the heat and gently mix in the Parmesan cheese, parsley, salt, and white pepper until fully incorporated. Enjoy while hot.
