Indulgent pork and tomato ragu pairs perfectly with Parmesan risotto or your favorite starch.
Ingredients:
  • 2 pounds pork shoulder roast, cut into cubes
  • 1 teaspoon dried rosemary leaves, crumbled
  • 1 teaspoon dried thyme leaves
  • 1 onion, diced
  • 1 carrot, peeled and diced
  • 2 cloves garlic, minced
  • 0.5 cup dry red wine
  • 1 (28 ounce) can diced tomatoes
  • 1 cup chicken stock
Instructions:
  • Season pork generously with aromatic herbs and spices. Heat oil in a large Dutch oven over medium-high heat. Sear pork until beautifully golden on all sides, approximately 10 minutes.
  • Combine the onion and carrot in a pot and sauté until the onion is soft, which should take about 3 minutes. Mix in the garlic and cook until fragrant, for about 1 minute.
  • Add the wine and stir while making sure to scrape the bottom of the pot to release all the flavorful browned bits. Mix in the tomatoes and stock. Simmer until the meat is tender and the sauce has thickened, approximately 30 minutes.
