Appeal to picky eaters with this quick and tasty crumbed chicken dinner that everyone will love. Ready in just 40 minutes!
Ingredients:
  • 125.00 ml plain flour
  • 84.98 gm milk
  • 500.00 ml fresh white breadcrumbs
  • 187.50 ml finely-grated parmesan cheese
  • 82.50 ml finely-chopped chives
  • 600g chicken tenderloins, trimmed
  • vegetable oil, for frying
  • 123.75 gm whole-egg mayonnaise
  • 68.75 gm sweet chilli sauce
  • 1/2 lemon, juiced
  • Steamed broccoli, to serve
  • Steamed carrots, to serve
Instructions:
  • Spread the flour on a plate. Gently whisk the eggs and milk in a shallow dish. Mix breadcrumbs, parmesan cheese, and chives in another shallow dish.
  • Dredge chicken in flour, dip in egg mixture, then coat in breadcrumbs, pressing to adhere.
  • Heat oil in a large non-stick frying pan over medium heat until it reaches 1cm depth. Cook chicken in 2 batches for 3 minutes on each side until golden and fully cooked. Drain on paper towel.
  • In a small bowl, mix mayonnaise, sweet chilli sauce, and 1 tablespoon of lemon juice until combined. Serve the chicken with steamed vegetables and the sweet chilli mayonnaise on the side.
