Delight your family with a quick and easy chicken dinner tonight.
Ingredients:
  • 82.50 ml plain flour
  • 2 eggs
  • 500.00 ml fresh multi-grain breadcrumbs
  • 125.00 ml grated parmesan cheese
  • 82.50 ml flat-leaf parsley leaves, chopped
  • 800g chicken tenderloins, tendons removed, trimmed
  • canola oil, for shallow-frying
  • Mashed potato, to serve
  • Steamed green beans, to serve
  • Lemon wedges, to serve
Instructions:
  • First, preheat your oven to 130C. Next, mix flour with salt and pepper on a large plate. Then, lightly beat the eggs in a shallow dish. Lastly, combine breadcrumbs, lemon rind, Parmesan, parsley, salt, and pepper in another shallow dish.
  • Coat the chicken in seasoned flour, shaking off any excess. Dip it in egg, then coat it with breadcrumbs by gently pressing them on with your fingertips.
  • Pour oil into a large frying pan until it reaches a 1cm depth. Heat over medium-high heat until hot and shimmering. Sear chicken pieces in batches for 2 minutes per side or until fully cooked. Place on a baking tray and keep warm in the oven.
  • Plate the chicken alongside creamy mashed potatoes, crisp green beans, and fresh lemon wedges.
