Whip up quick and easy cheesy breaded chicken - coat, fry, and enjoy!
Ingredients:
  • 75g (1/2 cup) plain flour
  • 2 eggs, lightly whisked
  • 45g (1/2 cup) dried (packaged) breadcrumbs
  • 40g (1/2 cup) finely grated parmesan
  • 12 (about 600g) chicken tenderloins
  • Vegetable oil, to shallow-fry
  • Mixed salad, to serve
Instructions:
  • In a shallow bowl, season the flour with salt and pepper. In another shallow bowl, place the egg. On a large plate, mix together the breadcrumbs and parmesan.
  • Coat each chicken tenderloin in flour, then dip in egg and breadcrumb mixture, pressing gently to cover. Transfer to a baking tray and chill in the fridge for 20 minutes. Repeat with the remaining chicken. Enjoy the crispy goodness!
  • In a large frying pan, pour enough oil to come 1.5cm up the side of the pan. Heat over medium heat. Cook half of the chicken for 4 minutes on each side or until golden. Transfer to a plate lined with paper towel. Repeat with the remaining chicken, reheating the pan between batches.
  • Arrange the chicken and mixed salad on individual serving plates for a delightful presentation.
