Lemon-Parmesan Chicken and Rice Bowl

Family-friendly cheesy, lemony, and crunchy delight!
Ingredients:
  • 1 cup rice
  • 5 tablespoons vegetable oil, divided
  • 2 cups hot water
  • 1 (8 ounce) package frozen broccoli
  • 2 pounds skinless, boneless chicken breast, cut into 1-inch cubes
  • 1.5 teaspoons garlic powder
  • 1.5 teaspoons onion powder
  • 1 large onion, diced
  • 1 lemon, zested and juiced
  • 0.5 cup grated Parmesan cheese
Instructions:
  • Preheat your oven to 400°F (200°C).
  • In a sizzling pot, mix rice and 2 tablespoons of oil until rice is coated. Add hot water, bring to a boil, then cover the pot.
  • Bake rice in a perfectly heated oven until all the water is absorbed and the rice is soft and tender, for 12 to 15 minutes.
  • In a large pot, boil broccoli in salted water until tender, about 5 to 7 minutes. Drain and season with salt and pepper.
  • In a hot skillet, add chicken to sizzle in remaining oil. Sprinkle with garlic and onion powder and cook until chicken is beautifully golden, about 5 to 7 minutes.
  • Mix the onion into the chicken and cook until the onions are tender and translucent, about 5 to 7 minutes.
  • Transfer rice to the skillet, allowing it to lightly brown for about 3 minutes. Add broccoli, then sprinkle lemon zest and lemon juice over the mixture. Finish by topping with Parmesan cheese.
