Tender chicken thighs cooked in a creamy garlic, lemon, and oregano Parmesan sauce.
Ingredients:
  • 3/4 cup grated Parmesan cheese
  • 1/4 cup flour
  • 8 skinless boneless chicken thighs (about 11/2 pounds)
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 3/4 cups low sodium chicken broth
  • 1/2 cup mascarpone or 4 ounces cream cheese,softened
  • 1 teaspoon lemon zest
  • 3 tablespoons lemon juice
  • 1 tablespoon cornstarch
  • 1 tablespoon water
  • Hot cooked bowtie pasta or rice
  • Chopped fresh oregano and/or basil
  • Lemon wedges
Instructions:
  • Collect all your ingredients in one place.
  • Mix together 1/4 cup of Parmesan cheese and flour in a shallow dish.
  • Season chicken with a pinch of salt and pepper, then coat it evenly in the flour mixture.
  • In a large skillet, heat oil over medium-high heat. Add chicken in two batches and sear until golden brown on each side, about 3 to 4 minutes per side. Transfer chicken to a plate.
  • Infuse skillet with the aromatic flavor of garlic over medium heat for about 1 minute until fragrant.
  • Combine in a medium bowl: broth, mascarpone, lemon zest, lemon juice, and remaining 1/2 cup Parmesan cheese. Transfer mixture to skillet and bring to a boil.
  • Combine cornstarch and water in a small bowl. Pour into skillet and stir until thick and bubbly.
  • Add the chicken back to the skillet and bring it to a boil again. Then, lower the heat, cover, and let it simmer until the chicken is cooked through and reaches an internal temperature of 170°F, which should take about 5 to 6 minutes.
  • Slice the chicken and gently incorporate back into the flavorful sauce.
  • Garnish with fresh oregano and lemon wedges before serving.
