Bake chicken breasts with creamy lemon Parmesan sauce for a simple and delicious weeknight meal.
Ingredients:
  • 0.5 cup salted butter
  • 6 skinless, boneless chicken breasts
  • 3 tablespoons lemon juice
  • 2 teaspoons lemon zest
  • 1 cup half-and-half
  • 0.5 cup grated Parmesan cheese, divided, or to taste
Instructions:
  • Preheat your oven to 350°F (175°C).
  • In a large skillet over medium-high heat, melt butter and cook chicken until lightly browned on both sides, about 5 to 7 minutes. Transfer the chicken to a baking dish.
  • Combine lemon juice and zest with the remaining butter in the pan, and cook over gentle heat for 3 to 4 minutes. Gradually blend in the half-and-half. Fold in 1/4 cup of Parmesan cheese until the sauce is velvety. Drizzle the sauce over the chicken.
  • Roast in the preheated oven until the chicken is fully cooked and the juices run clear, which should take 20 to 30 minutes. Check with an instant-read thermometer to ensure it reaches at least 165 degrees F. Finish by sprinkling the remaining 1/4 cup of Parmesan cheese on top.
