Creamy parmesan chicken tenderloins, ready in 25 minutes, served with crusty bread.
Ingredients:
  • 40.00 ml pine nuts
  • 18.20 gm extra virgin olive oil
  • 500g chicken tenderloins
  • 3 garlic cloves, finely chopped
  • 60ml (1/4 cup) white wine
  • 300ml Cooking Cream
  • Finely grated rind of 1 lemon
  • 25g (1/3 cup) finely grated parmesan
  • 1 green shallot, thinly sliced, plus extra, thinly sliced, to serve
  • Fresh basil leaves, to serve
  • Crusty bread, to serve
Instructions:
  • Heat a skillet over medium heat, then toast the pine nuts until golden, stirring occasionally, for about 2 minutes. Transfer the toasted nuts to a bowl.
  • Drizzle oil into a hot pan. Sear chicken for 3 minutes on each side until golden brown. Plate and enjoy.
  • Add the garlic to the pan and cook for 30 seconds until fragrant. Pour in the wine and simmer for 1 minute until slightly reduced. Stir in the cream and lemon zest, season to taste, bring to a boil, then reduce heat and simmer uncovered for 4 minutes until slightly thickened.
  • Gently fold the parmesan into the sauce, then mix in the chicken and green shallot. Let it simmer for 1 minute until the chicken is heated through.
  • Top the chicken with a generous sprinkle of pine nuts, extra shallots, and fresh basil before serving alongside some crusty bread.
