Elevate baked chicken with zesty Dijon mustard, savory Parmesan, fragrant basil, garlic, and crunchy cereal coating for a delicious twist!
Ingredients:
  • 3/4 cup Fiber One™ original bran cereal
  • 2 tablespoons grated Parmesan cheese
  • 1 teaspoon dried basil leaves
  • 1/4 teaspoon garlic salt
  • 1/4 teaspoon coarse ground black pepper
  • 1 egg white, beaten
  • 2 tablespoons Dijon mustard
  • 4 boneless skinless chicken breasts (about 1 1/4 lb)
  • 1 tablespoon canola or vegetable oil
Instructions:
  • Preheat the oven to 400°F. Grease a 15x10x1-inch pan with cooking spray. Place the cereal in a resealable plastic bag, seal it, and crush it finely using a rolling pin, meat mallet, or food processor.
  • Combine cereal, cheese, basil, garlic salt, and pepper in one bowl. Blend egg white and mustard in a separate bowl until smooth.
  • Coat chicken in egg white mixture, then cereal mixture; transfer to pan and drizzle with oil.
  • Bake for 20 to 25 minutes, or until the chicken's thickest part reaches 170°F and the juices run clear.
